Carbon monoxide is poisonous for humans because it can quickly form a complex with human haemoglobin. The complex built between CO and Hb (CO-Hb) is very stable, even more than the oxyhemoglobin complex (O2-Hb) by almost 300 times. Thus, in this state, haemoglobin does not further bind to oxygen.

Carbon monoxide is highly-poisonous because of its ability to form a complex with haemoglobin. The CO–Hb complex is more stable than the O2–Hb complex. The former prevents Hb from binding with oxygen. Thus, a person dies because of suffocation on not receiving oxygen. It is found that the
CO–Hb complex is about 300 times more stable than the O2–Hb complex.
CO makes our body organs like heart, brai etc deprived of oxygen,e.g. If we breathe carbon monoxide (which is formed by incomplete combustion of Carbon), it sticks to our hemoglobin and takes up all of the oxygen binding sites. So, our blood loses all of its ability to transport oxygen, and we suffocate.
