To my knowledge, traditional Western vocal music uses traditional notation with non-lyrical sounds spelled out as they are to be sung, such as 'ahh', 'ooh', 'oh', etc.
In the video shown the singer appears to be Oriental, probably Japanese. Her vocalizations resemble traditional Japanese music which may have notation that is very different from what is used in other places in the world.
This video seems to be a hybrid of several styles and instruments, old and new. I suppose the composer may have used a unique blend of notation to express his intentions in this particular case. Breathing would be the same as in any other vocal music; there would be appropriate spaces for breathing. I feel sure that she is hitting the intended notes and syllables here. This music just takes a bit more listening than usual to get a sense of its meaning.
Thanks for asking, Kuntal, this is my best answer. I am not that familiar with Hans Zimmer; others may have more to offer.
